I watched them open a burger bun and flatten it on a griddle. Flattened it like a pannini ; it came up all shiny and slick. Then they rolled the slug burger mix in a ball and flattened it in their hand, almost as thin as a crepe. They are such experts at this they can make them over and over without measuring them and they turn out exactly the same! They’re kind of yellow and looked like a fried egg. It’s flipped onto the bun which has to have a sprinkle of chopped pickle. Not relish. Chopped pickle, and a dollop of mustard. Not optional condiments; it’s what makes it a slugburger. The “burger” is made of ground pork and soybeans. You think I’m making this up? I went back the next day for another slug burger and four people in the snack bar bought books! See, it pays to be nice to the folks. They all said, “Y’all come back, now.” I hope I will.
